It’s the best use for leftover meatloaf — on the rare occasion there is leftover meatloaf.
I’ll sometimes make a “meatloaf salad” sandwich: break it into chunks and stir it up with mayo, Dijon mustard, some chopped onion, and a bit of Woosterchestershire. It’s messy but good.

No cheese, just add ketchup ( a couple slices of bacon helps too)!

I always make a large meatloaf for the sandwiches the next day, I make it big so we can have some for dinner that day.

Good cold or, my favorite, pan-fried slices where the surfaces get nice and crispy, with mustard and lettuce on bread.

try doing that with bacon grease . the flavor is wonderful !
and use good rye bread too.
mom used to make up extra meatloaf just for making sandwiches
like that. there where 6 kids and them, so mom knew how to make it
last. she make up 3-4 loafs at a time and bake them.
one for dinner and the rest packed in the fridge for later.
something she did on weekends and used during the week when time was short I did a bit of that myself as a single parent with 2 kids. cook on my day off and serve during the week.
Sounds like you and I had the same upbringing. Meatloaf sandwiches with Longhorn Barbecue Sauce (instead of ketchup) is to die for!

Always. We have a house minimum here. And meatloaf sammiches carry a minimum of two.
A thick slice of meatloaf, two thin slices of sweet onion (one on each side), stone ground mustard on one side and horseradish sauce on the other, on crusty sourdough.
Two thumbs up on the horseradish sauce. It doesn’t seem to get the respect I believe it deserves.
It would be un-American to not eat meatloaf sammiches.
Yum! Haven’t had one of those in years now that I follow a low carb diet. Gotta try to maintain that girlish figure 😁. But I remember them fondly. Although I will occasionally break the low carb diet for a plate of biscuits and gravy!

But I like those other ideas of thin slice onion and mustard. Have to try them some time in the future
