Tomorrow is Monday or maybe today is depending on when you read this and that’s traditionally wash day in South Loozy-Anna and Mama always makes a big pot of red beans and rice because she’s busy with the wash and ain’t got time to cook. Big bowl of red beans and rice with a few spurts of Louisiana brand hot sauce and some green onions on top and a few nice pieces of andouille sausage and you’re set. I made a big pot last Monday myself.

Wifey Unit and I made a BIG pot of (non-carne) chili, most of it is in Ziploc bags in the freezer. It’ll feed us off-and-on for a week, and tastes even better after thawing because the freezing process breaks down the ingredients (cellular level) and makes a tastier chili.
Mom (both hers and mine) taught us to make BASIC food out of raw ingredients, nowadays a lost art. People eat processed foods because their parents were stupid to not teach basics FIRST. They traded convenience for health…
