    You ever watch the weekly videos of Cowboy Cook Kent Rollins? The man is the **KING** of cast iron. I may have asked you this before, so apologies if I’m being redundant.

    I hauled out my (enameled) cast iron braising pan last night — made Cajun-style soft shell crab sammiches .. served ’em on very fresh brioche buns with spicy remoulade and a heaping pile of crunchy slaw on the side. Oh Holy Brother of Moses those were some tasty sammiches. Sadly, like everything else, the price of those crabs has gone up. WAY up. Still ..they were Mighty Fine.
