Yum! Great way to use left-over mashed potatoes. Mix-up a batch of potato cakes, wrap a scoop around a chunk of your favorite cheese (I’d use pepper jack), then wrap in a bacon strip and bake.
You up for making me a batch? I like Wisconsin Sharp Cheddar too!

Ah, you have never feed hay-hands, thrashers or possibly teen-age males? You make mashed potatoes by the wash-tub full. Basically, if there is a spoonful of left-overs you save it until the end of the week. Then, there are two dishes to be made with the weekly left-overs…a pot of soup and potato cakes for either Saturday or Sunday breakfast. The old waste not, want not thing.

I guess I am the only Hell No! I believe it is a mortal sin to place bacon into a oven. The only Godly proper way to cook bacon is in cast iron. Over a flame. Next thing one of you yahoos is going to suggest is to cook a steak in the oven or gag a maggot…..wrap some foul green shit extruded from a dead zebra’s ass like asparagus with bacon. No wonder the country is going into the shitter. Then maybe I’m just pissed off today. Well, I guess I am just about every day.
This is the first good reason I have seen for buying an air frier. Now I have to go shopping.
