As a much younger man, I stopped dozens of times at houses and asked about buying that old junker they got parked on the side. Always – ALWAYS – got told nope, saving that to restore one day.
You got a freaking tree growing up the middle of it, and you’re still saving it? Damn.
Realistically, all you need off that Mustang is a VIN, you can build a new car from parts and slap that VIN on to make registration that much easier. There was a time when some unscrupulous people would troll junkyards and pry off VIN tags to re-sale for just that purpose.
I had the same experience but I never have given up.

Those people have always p***** me off. They would rather let something rushed into the ground than anyone else have their precious. And if they did consider selling that would be “$20000. No low balls, I know what I have.”
I think it was awesome for the property owner to actually SELL that car and make money while getting his land cleared at the same time!
SAVE THE WINDSHIELD if it’s not de-lammed or cracked, and also the side windows, you idiots. Worth their weight in gold. It can pay for the tow, at a bare minimum…
Oh, and the trim, and the badges and emblems as well. They look to be fairly good..

Gage cluster, light assemblies & lenses, switches & knobs, door handles….. they could have made a ton of cash.
Exactly., Take some time, dismantle to component level, sell the parts for FAR more than you can get for the rusted out hulk.
