  2. In the dim past, I sat in a Holiday Inn in New Orleans, visiting for that year’s SHOT Show. I was happily munching away on their perfectly cooked crispy bacon rashers. If I couldn’t have any other food for the rest of my life, it wouldn’t have irked me. Does anyone know what cooking process that a big hotel’s kitchen uses, to result in such perfectly cooked streaky bacon? It had to be either forced-air convection cooked in a mesh tray, or a deep fryer, as all parts of each rasher was equally done
    I don’t care if you cook it on a grill plate or a skittle, you’d never get it so perfect. Oh, BTW, neither, any well-seasoned gumtree wood.

    • You are dim if you were in a Holiday Inn on New Orleans… enjoy the niglets spitting into your rashers? They are world famous down there for doing that to less melanin variety of superior humans
